As a veternarian, Dr. Rosenblum wanted to honor the animals that give us so much joy so he created "Ch?teau La Paws", Rh?ne-inspired blends with a California twist. A portion of the proceeds from the sale of this vibrant and deliciously playful wine benefits Paws With A Cause, a charitable leader in training assistance dogs for people with disabilities. And tonight we'll also donate the proceeds from the cost of the tasting to the LASPCA. Join local artist Kathy Schorr tonight and view her gorgeous handpainted silks that will soften our walls for the next month. We'll also be drinking five really great wines from the Babcock winery in the Santa Ynez Valley with Scott Howett from Mystic Vine. Also Chef Dan Esses' 3 Muses tapas plates available from $5-$12. This event is free and open to the public.

Central Coast winemaker Bryan Babcok has been getting lots of recognition lately as the Los Angeles Times named him as one of the "Ten Best Winemakers of the Year", he was also named by this influential daily as "Most Courageous Winemaker of the Year" for his daring style. The prestigious James Beard Foundation chose Bryan as one of the "Top Ten Small Production Winemakers in the World," the only American to receive the title!

Located in the Santa Ynez Valley, the Babcock family has owned and operated the winery for over 30 years. Pretty small production here, ranging anywhere from 300 cases to 5000 at the most. They offer an excellent range of wines and to show you the scope of what they make we'll be tasting five of them in our Friday Free For All this week. On October 12, 2010, Swirl Wines presents St. James Cheese owner Richard Sutton and Morgan Stroud from Purveyor of Fine Wines for a wine, beer, and cheese pairing night featuring the premium MOA boutique beers and Allan Scott wines from New Zealand.

The production of theses unique brews by winemaker Josh Scott starts off quite normally. Josh brews the beer using mainly local hops, malt, wheat, or barley. Then he veers off the well-worn path. Josh bottles the beer, adds a dose of yeast and sugar and then seals the cap. Just like champagne, the bubbles produced by this second fermentation are dissolved in the liquid. The result is a beer unlike any other--clear, exquisite, and bottle-fermented. From 6-8 p.m., we'll be tasting 4 of the MOA beers and as an added treat, winemaker Josh Scott's Pinot Noir and Sauvignon Blanc paired with 6 different cheeses. This is a seated tasting and is limited to 20 participants. Reservation and prepayment are required. Call 504.304.0635 for info and reservations. $20.

They are holding an Open Casting Call in New Orleans, LA on Monday, August 16, 2010. World's Oldest Champagne Found

Divers exploring a shipwreck found recently in the Baltic Sea between Sweden and Finland had even more reason to celebrate when they found that the ship contained up to 30 bottles of what is now the world's oldest drinkable Champagne.

The Champagne is believed to date, like the ship, to the 1780's, and the oldest Champagne vintage of which bottles still survive is the 1825 Perrier-Jouet (pictured).

The divers know it's Champagne, and that it's drinkable, because they immediately opened a bottle and tasted it. "It tasted fantastic. It was a very sweet champagne, with a tobacco taste and oak."

I can't say that I blame them. The remaining bottles may be worth as much as $68,000 each, so chances are they aren't going to get many more opportunities to taste it.

How to Open a Wine Bottle...with a Shoe

Sure, the commentary is in French. Sure, the real action doesn't start up until 1:00. But wouldn't this information come in handy next time you have a bottle of wine, a man's dress shoe, and no corkscrew?

I'm guessing that a woman's shoe with a similar structure would work as well, or maybe an athletic shoe, but maybe not high heels or sandals. Let me know if you try it with other shoes and have a positive result.



Try this at your own risk, as there is at least a chance that the bottle could break. Not recommended for sparkling wines...use a sword for those.

Join us for a very special event on Wednesday, June 9th, 2010, as Swirl Wine Bar and Market pair up with Angel Miranda, Chef/Owner of Lola's, as he opens his home for a demonstration of new, global Spanish cuisine cooking techniques by acclaimed Spanish Chef Fernando Sanchez Gonzales, assisted by Angel. Chef Fernando Sanchez Gonzales of Barbacana Restaurante & Tapas Bar near Madrid has worked extensively in fine restaurants throughout Spain, and has been invited to New Orleans to work with Lola's staff to infuse some new spice into their current menu.
