Adding water to your wine is almost as old as wine itself. The Romans and Greeks would have never considered drinking wine without adding water first; in fact, they considered it guache behavior on a par today with chugging Night Train out of a paper bag. Even in mediterranean countries today, wine mixed with water is considered a proper beverage for the family's children, with less water being added as the child grows older. Few of us in the U.S. want water in our wine, though. What we don't know is that much of the time, we're getting it anyway. And yet we should probably be thankful that we're getting our wine watered down for us.

One of the first things to consider when tasting a wine is its appearance. It's rare nowadays to find a wine whose looks tell you much. At one time, a dull, cloudy wine might reveal a badly-made wine; now most winemakers use modern techniques that prevent visible problems. But it could happen, so we keep considering it as a factor. Besides, it's fun. Wine is pretty, so it's pleasant to look at, especially if the color is one of your favorites. And you can get clues about the grapes and the wine from the color, although those clues tend to be read mainly by people with more wine experience than your humble narrator.

Orson Welles and a Little Too Much Paul Masson

If you're of a certain age, you probably remember the commercials that an aging Orson Welles did for Paul Masson wines. They featured the memorable tag line: "We will sell no wine before its time." In my house, this led to frequent shouting of "It's time to sell some wine!" often accompanied by pantomimes of turning empty pockets inside-out. (Yes, we may have been lame, but we did have fun--and a tasty beverage--on occasion.)

As it turns out, Welles may have gotten some of the inspiration from a source other than his theatrical muse--namely, the wine bottle, as this video shows.

Review: Galatoire's Bistro, Baton Rouge

When the famous New Orleans restaurant, Galatoire's, announced shortly after Hurricane Katrina struck that it was opening a restaurant in Baton Rouge, much of New Orleans rose up in anguished protest. To be fair, several New Orleans-based businesses had just announced that they were moving to other, undamaged cities, abandoning the place that had allowed them to grow without a second glance. (Ruth's Chris Steak House, we're looking at you.) It was painful to think that a New Orleans icon like Galatoire's might be joining them.

Then the owners made it clear that they had been planning a Baton Rouge restaurant for some time, and that they were definitely going to re-open their French Quarter restaurant as soon as possible. (It's open now.) Tempers died down, and Baton Rouge inhabitants, both previous and post-Katrina, started simply looking forward to that highest form of ordinary entertainment for south Louisiana: a new restaurant to try.
